Having rebuilt the four wheels on my two classic bikes as an amateur, I appreciate the learning experience you went through.
 
The thing that really surprised me was how uneven the original job seemed (based on amount of spoke in the nipple). By the time I was done I got away with only 1/4 of the wheel balancing weights that were originally on it. But then, I had the luxury of spending about 8 hours on mine (across two days) - though the final truing only took about an hour. I'm sure the central wheel guys get them done in 10s of minutes.

Now my front wheel is sooo shiny compared to the back, I'm tempted to repeat the whole process on the rear. :-)

You're right, those guys can probably true a wheel in 15 minutes.
It took me more than an hour to do just one wheel until I was satisfied and it was well within specs.
Truing is (can be) a frustrationg job for an amateur, but very satisfying when it's done and you did it yourself.
