I own a 2018 Bonneville T120 that I purchased last fall with almost 30K on it. The previous owner took great care of it and it still looks new except fof the chain and sprokets that were never replaced. My question is how many teeth should I add to the rear sprocket and remove from the front sprocket if I want to lower the ratio by one gear. In other words lower the 6th gear ratio to the 5th gear ratio.

This is what I did to achieve the result you want. Changed the rear to 42T, Thruxton sprocket, Did not change the front, puts torque peak at about 55-60 in 6th gear. With stock 100 links puts axel in the middle of the adjustment slot.
