Hi Basil, I’m presuming if your bike is mint it has fairly low mileage? I would think that steering head bearings should last a hell of a lot longer than 10,000 miles. I have nearly 30,000 miles on my 2015 and the bearings are fine. I realize this is a 2007 model but if it’s in mint condition then the previous owner/owners have obviously looked after it. Have you checked a balancing weight hasn’t fallen off the front rim?

I think in 2007 they are still using round bearings. These are the original bearings they were shot. The new ones I put in are tapered should last much longer. My guy only charged me 200 bucks to install them I think that's fair.
 
Check your chain is adjusted correctly, that said it is normal to feel some “lurching/snatching “ as you back off the throttle, more so in the lower gears.
