Use a seasoned cast iron skillet for frying.

Slice the green (firm) tomatoes and batter them in a cornmeal and egg batter with a little pepper added.

Heat the frying pan with about an inch of peanut oil in it. Drop the slices in the pan and turn them only once. You want to get the batter a light, golden brown.

Cornmeal batter and peanut oil are the keys. Yum! :ya2:

Cream cheese pie with a fruit topping - cherry, blueberry, or peach. Pineapple upside down cake.

Speaking of food, i made tacos for my house mate and her mother the other day. (i live in the back house) they are peruvian and love latin food. I have never before in my life cooked for others, and they completely freaked over them. I am not much of a cook really at all, but i DO know how to make some good tacos. i guess they were better than i even thought tho! She is about 5'1" and maybe 90 Lbs, and she socked down FOUR of them proclaiming how these are the best tacos she ever ate between every bite ! Her mom ate 3 and i could tell she wanted more but i only made 9 thinking they could never eat more than 3 each. i stopped at 2 because i could see they were going to want more that i anticipated. It was enjoyable watching them eat and how much they liked them. her mom was scooping up every last little shred that fell out of the last one she had. i felt bad knowing she wanted more. I'd have only ate 1 had i known that right off. I will have to make them a huge platter one day soon all for them.

Very good, Dale. It is fun to watch others appreciate what you have cooked. I love tacos and burritos. Mae Lyne is a very good Latin cook. Her mom was Cuban and also and excellent cook. We eat a lot of traditional Latin dishes.
