Finland faces the USA in Ottawa (Hockey World Cup; under-20s final).

Finland beat Sweden (in the semi-finals) 4-3 yesterday. It was a tough game. The situation was 3 - 3 after three periods/60 minutes and the game ended in overtime. In the last minute of 10 minutes of overtime, the Finns scored the winning goal. Sweden was a slight favorite in the game, but overall the game was very tight. Basically, the Finns won because their goalkeeper (who has been the best of the tournament) made a few big saves again.

USA beat the Czech Republic 4 -1 in the second semi-final.

So Sikatri does your heart beat for the United States or does the land of your ancestors still have a small place there? In other words... Is it Mc Donald's BigMac or Karelian pie with egg butter, Salmiak and dark rye bread?

The USA is the favorite for the final. On the other hand, Finland has caused the team USA the only loss of the tournament (initial group game). But a win would require a 100% game from Finland.
Home team Canada? A big disappointment for the home crowd; didn't make the top four. Judging by the crowd's reactions, they will support any European team over the USA :). Of course, the USA is last year's champion, which may play a role here?
 
Well I can’t lose is the best way to look at this! I really do need to make some Karelians pies to share with my nieces, but I am ready for …….

In my heart those Karelian pies always win out in a tight push for culinary delights, and I’ve been addicted to Finnish candy especially salmiakki since I was a kid. The dark mystery bottle is home made Finlandia Salmiakki vodka! Good luck to all, as I said I can’t lose this one! LoL.

What comes to the ryd breads ... that should be done by using the root of sourdough bread (and not with yeast).

Making gravlax/ salmon at home is very easy. Making cold-smoked lax/salmon at home is a little more difficult. My father modified the device for it from an old working refrigerator (a free tip).

I followed a Finnish recipe, it called for yeast. It is absolutely better than any rye bread you can buy here in the USA, except perhaps in parts of Upper Michigan and Minnesota. It wasn’t a Finnish sourdough rye recipe though. I know the one you’re talking about. Sometimes sacrifices have to be made. LoL. Getting a starter dough isn’t easy, so haven’t done that version.

I was about to add that in normal homes ... especially in apartment buildings, but also in ordinary detached houses ... it would be difficult to live with sour bread root :). Here in the countryside and on a farm (lots of space and buildings) ... a different story. We used to have a pretty old one, but my mom managed to kill it. The present one is less than 15 years old.

We had some years ago, my mom killed it too. LoL.

The Finns put up a good fight, but it just wasn't enough. The Finns lead 2 - 0 after the first period (20min). The Finns still led 3 - 1 in the middle of the game, but the USA made it 3 - 3 before the end of the 2nd period. No goals in the third period. The game went to overtime (and sudden death) ... and the USA scored the winning goal. USA won the game and the tournament 4 - 3.

The Czech Republic won bronze medals. Sweden came 4th. This game also ended in overtime and even penalty shots. 18. shooters were needed before the Czech won. Never seen the same in hockey. Both goalkeepers played well.
