Running rich after remapping

I have a 110 year anniversary Bonneville with leading link forks and a trials sidecar for trail riding. Great fun!
I added a high level 2:1 Arrow exhaust and it ran fine but it was suggested that I remapped it. I took it to the dealer who remapped it to 'Arrow' but it ran badly afterwards. It's hard to start when warm, is very 'fluffy' and takes a few blips to clear. Fuel consumption has increased and the end of the silencer is black. I took it back to the dealer this morning. They've remapped it again as it seems they mapped it for the low level 2:2 system. I thought that would crack it but no. It's as bad as ever!

Has anyone else fitted a high level Arrow system to a Bonneville? (Lots of mods to brake master cylinder and side panels!) Have you had problems? Reading the forum I see it is suggested that you use the cold start button even to start when hot. I tried that and it doesn't make a difference. Am I missing something or should I just go back to the standard mapping?

Yup, I guess that's logical! I suppose my only hesitation is that without the cat and slightly less back pressure the standard mapping might be a bit lean. I'd rather run it a bit rich than too lean.

I've also got the 'sometimes won't start' problem but there's pages and pages about that. When I mentioned it to the dealer he also replied with a 'they all do that - it's not a fault, it's a characteristic' response! Doesn't inspire confidence!
 
I did a de-cat with a Motone X-pipe and put on BC shorty predator pipes and didn't remap anything. I just did the start up idle to fan cycle deal and let the ECU adjust itself to the new setup. Runs great. Oops... forgot... I also put on a Booster Plug so it does run a little more rich than stock.

Update on my original problem....

I was speaking to a friend who mentioned a company (here in the UK) called Triiumph Twin Power. They specialise in tuning the modern twins, so I rang them and outlined the problem. They were very confident they knew the problem and that their stage 1 tuning kit would fix it, so I ordered the kit. I got a small box in the post very quickly containing a new air filter, air box intake cover, blanking plugs for the sensors and the correct lead to connect my ecu to my laptop. Using their code, I then downloaded the new mapping. I'm a complete idiot when it comes to things to do with computers but with a bit of support from TTT I soon had it installed.

Problem solved! The bike starts and runs so much better. It's crisper, more responsive, smoother and (I think - but haven't checked properly) more economical. I'm really pleased. Got a classy little badge with the kit too!
